How To: Easy, Delicious and Beginner-Friendly Mediterranean Pasta Recipe

As you may have seen, March is National Nutrition Month! This year’s focus of NNM is “Celebrate a World of Flavors” and encourages trying and embracing different cuisines from around the world. Sounds fun, right?!

One of the most talked about cuisines at the moment and one of my absolute favorites to enjoy is Mediterranean cuisine. If you’re not familiar with this type of cuisine it places a heavy focus on whole grains, fresh fruits and vegetables, heart healthy oils and fats such as olive oil, fish and seafood, physical activity, and community with others. Not only is this type of cuisine absolutely delicious, but it does not shy away from any particular food group and includes carbohydrates, dairy, and even wine. You know I love it when no food group is restricted! Instead, greater emphasis is put on community and taking the time to sit down and enjoy meals with friends and family. Mediterranean food promotes an overall balanced and non-restrictive way of eating.

The recipe I’m sharing with you is one that Matt actually started making right after we got married. I remember the first time he made it we were shocked by how much flavor could be packed into such a simple and straightforward dish. Don’t be fooled - you don’t need a bunch of fancy ingredients to make something delicious! It combines many of the foods that are typical for Mediterranean cuisine such as olive oil, whole wheat pasta, fresh herbs, fresh produce, legumes, and dairy. If you really want to go all out, enjoy a glass of red wine with dinner and invite friends and family over to share with!
